🍅 Rainy Day Oven Roasted Tomato Soup 🍅
Waking up to a chilly autumnal rain after returning from a beach vacation set the perfect vibe for a cozy lazy Sunday in the kitchen. When my family was going through a tough time during my senior year of high school, my Aunt & Uncle would make batches upon batches of this very simple, yet profoundly flavorful velvety soup to provide much needed comfort & nourishment. It's one of the first from-scratch soups I learned how to make, & have modified it over the years to suit my changing needs and tastes - most recently adding silken tofu to enrich it with protein & make it super creamy So whether your day is rainy outside in the world or soggy in your heart, this is the perfect cozy & mostly hands-off meal to fill your home with that warm comfort food smell. RECIPE Roast the following on your preferred low heat from 300-350, until it smells ready. For some of you this may be 45 minutes, for me, it was 2 hours:
Transfer to your soup pot & add:
Serve with finishing salt and a sprig of basil 🍅🌿 ATTENTION LOCAL PITTSBURGHERS! If you love fresh and local food as much as I do, I want to introduce you to my bff Harvie! “What do you really want?” In my experience with my coaching clients, and people in my circle, the answer is usually a hesitant “umm…wow…I don’t know! I guess I’ve never really thought about it.” Or often I receive a list of everything they DON’T want. I’m sure you can relate. You may have an idea of what your dream car is, or where you’d really love to go on vacation, but what about your everyday experience? Have you ever thought about what you really want life to be like? You may be so caught up in the grind of daily rhythms, obligations, and to-do’s, that you wind up living your life on somewhat mindless autopilot, drifting along, or getting stuck in the weeds. So, you wind up living according to someone else’s (your parent’s, your teacher’s, or our culture’s, “traditional” racist hustling patriarchal…) vision of what our life should look, be, and feel like, or you simply fall into a disenchanted and stale way of life by accident. You look around in 10 years and wonder how you got where you are…what happened? Imagine if you took time to consciously craft the vision for what you would really love for this life, and stayed connected to it by taking consistent, regular, and easeful action. What could be possible? What could you create? How could that change your life? How could that change the WORLD? If you’re anything like me, You spend all your energy creating a really juicy, nourishing, and inspiring vision, but then you fugghedaboutit! (hello object permanence) Here are 5 simple ways to keep your vision in the forefront of your mind, so that it becomes impossible to forget about. This results in making choices on a daily basis, both by intention and by accident that lead you towards the life you’ve always dreamed of living.

Last week my laptop battery died, it had to be shipped out, I didn’t receive the out for delivery notification and missed it, so I couldn’t pick it up from the UPS Access point until Friday. Now my cord seems to be fried and she still doesn't wanna charge. I had 30% of the client load that I normally do which means I only earn 30% of my expected income. The Summer Slump is real, friends. I found not one but TWO mice in my oven. (Trapped and released humanely) One mouse is cute. Two mice...not so cute. Mice Math. I needed a friend. So I made lunch plans with one, and literally the minute we sat down, she received a call that she had to pick up her son from camp because he threw up, because he was grossed out that someone had said “moist’ - A word that I believe people hate because of the patriarchy, but that’s a soapbox for another day So, I get home, and my internet is out. I need a new modem/router combo. Luckily Staples had one in stock for the low low price of $200, and I was able to hook it up myself. After that my boyfriend and I got into an argument. And now my poor lil dog Renly has pancreatitis - The icing on the crap cake of the week. Enter: |
